Souvlaki Wrap with home-made pork gyros

Instructions

Marinate the pork gyros: Place the pork slices in a bowl, add the olive oil, vinegar, spices, and garlic. Mix well, cover, and let marinate for at least 1 hour (ideally 3–4 hours or overnight in the fridge).

Cook the pork in a non-stick pan or grill plate until golden brown and crispy on the edges.

Warm the pitas in a skillet or oven, and optionally brush lightly with olive oil for richer flavor.

Spread the sauce over the pita, add pork gyros, tomato slices, onion, and fries if desired.

Wrap tightly and serve immediately while warm.

Ingredients

– 4 Alexakis pitas
800g pork shoulder or neck, thinly sliced
– 1 tbsp olive oil
– 1 tbsp vinegar
– 1 garlic clove, minced
– 1 tsp oregano
– ½ tsp sweet paprika
– ½ tsp thyme
– Salt & pepper
– (Optional: ¼ tsp cumin)
– 1 tomato, sliced
– 1 small onion, thinly sliced
– Yogurt sauce or tzatziki
– 200g French fries (optional)

Quick tip

The beneficial properties of extra virgin olive oil are an integral part of all our pitas, and, because of this, they are sold lightly oiled. Oregano and salt complete the great taste. For a different flavor, you can add thyme or rosemary.
