Chicken & Sundried Tomato Sandwich

Instructions

Prepare the chicken by seasoning the fillets with salt and pepper. Cook them on a toaster or grill pan with a little olive oil for about 4–5 minutes on each side, until fully cooked. Let rest for 2 minutes and slice.

In a small bowl, mix all the sauce ingredients until smooth.

Lightly toast the Pitta Toast. Spread some sauce on the bottom slice. Add chicken, sundried tomatoes, and spinach leaves. Close with the top slice and serve warm.

Ingredients

– 4 Pitta Toast

2 chicken breast fillets, cut in half

80g sundried tomatoes in oil, drained and finely chopped

– 2 handfuls of fresh spinach leaves

– Olive oil

– Salt, pepper

Mustard – Mayo Sauce

– 3 tbsp mayonnaise

– 1.5 tsp mild mustard

1 tsp honey (optional, to balance acidity)

– 1 tsp lemon juice

Quick tip

The beneficial properties of extra virgin olive oil are an integral part of all our pitas, and, because of this, they are sold lightly oiled. Oregano and salt complete the great taste. For a different flavor, you can add thyme or rosemary.
